Cold Therapy Soup

Combine your favorite tea in a tea bag with parsley stems, a bay leaf, and peppercorns to boost the flavor of your soups. KONI Cold Therapy Soup

Ingredients:

  • 1 tablespoon canola oil
  • 1 cup chopped onion
  • 1 cup chopped celery
  • 1 cup chopped carrots
  • 3 peeled and diced fresh ginger
  • 2 cloves garlic
  • 1/2 pound of boneless, skinless chicken breast, cut into 1 inch pieces
  • 4 cans of fat-free. low sodium chicken broth
  • 4 tablespoons of Koni Throat Revival Tea
  • 4 parsley stems
  • 1 bay leaf
  • 1 teaspoon black peppercorns
  • 1 cheesecloth and string
  • Salt as needed
  • Chopped parsley

  • Vegetarians can substitute vegetable broth for chicken broth and diced red potatoes for the chicken breasts.


    Directions:

    1. Combine the herbal tea, parsley stems, bay leaf, and peppercorns in a large cheesecloth and tie together.
    2. In a small saucepan warm up 4 cans of chicken broth and add the sachet. Simmer and keep warm.
    3. In a separate sauce pan, heat the canola oil over medium heat. Add the chopped carrots and caramelize them for 3-4 minutes.
    4. Add the chopped onions, celery, ginger, and garlic. Add the chicken ; saute for 4-5 min.
    5. Add the chicken broth and tea bag/sachet to the chicken and bring to a boil.
    6. Reduce the heat and simmer for 20 minutes.
    7. Remove the tea bag/sachet.
    8. Sprinkle with salt and pepper to taste.
    9. Garnish with chopped parsley.
