Day 1 Detox Dinner: Acorn Squash

This Turkey, Brown Rice, Roasted Acorn Squash accompanies Day 1 of the Koni 3 day detox with healthy food blog.

Squashes are rich in vitamin A (in a form of beta carotene important antioxidant, which helps to boost our immune system and fight inflammation which is very important during cold and flu season), and fiber which we always need to feel and look better.

Ingredients:

  • 1 acorn squash cut crosswise in half and seeded
  • 1 tablespoon olive oil
  • 1/4 pound grilled turkey cut into small pieces
  • 1 shallot chopped
  • 1 clove garlic minced
  • 1/4 cup red or yellow bell pepper, chopped
  • Salt and ground black pepper
  • 1/2 cup of cooked whole-grain brown rice
  • 1 tablespoons chopped parsley leaves
  • 2 tablespoons of crushed almonds or cashews


    Directions:

    1. Preheat oven to 375 degrees F and place squash halves, cut sides down on a baking sheet and roast until fork-tender. You can also cook squash in microwave oven on High 8 to 9 minutes or until fork-tender; set aside until cool enough to handle.
    2. In a nonstick pan, heat oil over medium-high heat until hot. Add garlic, onions, bell peppers and lightly brown until tender. Approxinmately 4-6 minutes.
    3. Turn off the heat, add grilled turkey pieces and crushed almonds or cashews.
    4. With a spoon, scoop out squash, leaving 1/4-inch-thick shell. Add scooped-out squash to pan with turkey; stir in rice (it is not necessary to heat rice as label directs) and parsley until combined.
    5. Spoon turkey mixture into squash shells; place in prepared pan. Bake 20 minutes or until heated through.
