| Deglaze With Tea: Strawberry Green Tea Salmon |

Are you looking for that SECRET ingredient to spice up your meal? Turn to tea! Infusing tea with your favorite dish is a delicious way to incorporate all the antioxidant properties of tea into your diet. Here is a recipe I created using Koni Mighty Athena (premium green tea with strawberries and papaya) as a deglazing liquid and sauce. Ingredients: Directions: 1. Heat the oven to 400 degrees. 2. Brew 2 cups of Koni Mighty Athena tea by infusing 2 cups steaming water with 4 teaspoons of tea for 2 minutes. 3. Cover a baking sheet with foil and oil lightly. Meanwhile, saute the garlic in a pan with olive oil, then add the diced onions and cook until tender. Set pan aside. 4. Switch the oven to broil when the oven is hot. 5. Brush the salmon fillets with olive oil and season with salt and pepper and place the salmon under the broiler. Cook for 8 to 12 minutes, until the top is very brown and the flesh is pink in the center. Halfway through the cooking time, rotate the pan. 6. While the salmon is cooking, take the pan with the garlic and onions over low-medium heat and add the brewed tea and simmer for 5 minutes. Add the diced mangoes and strawberries. 7. Spoon a generous amount of sauce onto the middle of your plate. 8. Place the salmon fillet on top and garnish with a spoonful of sauce and a sprig of basil. Makes 4 to 6 servings.
