Lavender Chocolate Truffles

Hazelnut ganache ingredients:

  • 3/4 cup hazelnut, toasted then crushed fine
  • 8 ounces of semisweet chocolate cut into small chunks. I like callebaut chocolate.
  • 3/4 cup of heavy whipping cream
  • 2 tablespoons of unsalted butter
  • 1 tablespoons of brandy
  • 1 teaspoon of crushed lavender
  • 1 teaspoon of Koni Matcha Green Tea

    Hazelnut ganache directions:

    1. Place the chopped chocolate in a medium sized stainless steel bowl.Set aside. Heat the cream and butter in a small saucepan over medium heat.=Bring just to a boil. Immediately pour the boiling cream over the chocolate and allow to stand for a few minutes so the chocolate melts. Add the toasted, crushed hazelnuts. Gently stir with a whisk until smooth. Add the brandy.
    2. Put the bowl in the fridge until the mixture is stiff (about an hour).
    3. In a separate bowl, create a mixture of finely crushed roasted hazelnuts, 1 tsp of Koni Matcha Green Tea, and cocoa powder.
    4. Use a melon baller, small ice cream scoop, or teaspoon to get small amounts of the ganache.
    5. Make small balls, rolling them into the palm of your hands as quickly as possible before they melt too much.
    6. Put them into the bowl with the cocoa powder, hazelnut, and lavender paradise tea and roll around until they are coated.
    7. Place the truffles into a serving bowl layered with lavender paradise, then sprinkle the top of the truffles with lavender.
