| Fig Jam With Vanilla And Honey |

Figs are not only one of my favorite fruits but it's also one of the healthiest foods on the planet. Figs are very high in fiber, potassium, calcium, antioxidants, and even lowers insulin levels and triglyceride levels. Delicate and sweet in flavor, fig jam is one of my favorite things to make in the late summer. I used a light colored honey to allow more of the fig flavor to be enhanced. Honey will also help fruits retain their jewel like colors when being preserved. The addition of ground Koni Creme Earl Grey Black Tea adds additional antioxidants and a heavenly vanilla flavor to this jam.
 Figs
Makes about 4 half pint jars- 3 cups finely chopped fresh figs (about 1 lbs). A few figs that are not completely ripe should be used since they contain natural pectins that allow the jam to thicken without the use of commercial pectins.
- 2 cups light colored honey
- 1 tablespoons lemon juice
- 1/2 cup chopped walnuts
- 1/4 teaspoon of cinnamon
- 2 teaspoons of Koni Creme Earl Grey Black Tea finely ground in a spice grinder

Combine figs, honey, spices, ground black tea and lemon juice in a bowl. Mash together. Cover and let stand about 2 hours to draw out the juice. Stir the mixture occasionally to dissolve the sugar.
Transfer mixture to sauce pan. Over medium heat, bring mixture to a boil. Reduce heat to medium-low and maintain a simmer for 20 minutes. Make sure to stir occasionally to keep the jam from burning to the bottom of your pot.
When mixture reaches the consistency of jam, remove it from the heat and stir in walnuts. If using a candy thermometer to test for temperature, it should read 200 degrees F.
Pour mixture into hot, clean jars and cover tightly. Will keep about 2 months in the refrigerator.
